How to Make Dhaba Style Aloo Paratha

Dhaba Style Aloo Paratha is a delicious Indian stuffed flatbread. It has a crispy outside and a flavorful potato filling inside. However, this recipe uses a slightly different method.

Instead of using plain mashed potatoes, we fry the potatoes with spices first. This simple step creates a richer filling. As a result, every bite has more flavor.

First, heat oil in a pan. Add whole coriander seeds and cook briefly. Next, add cumin seeds and allow them to crackle.

Then, add finely chopped green chilies. Fry them over low heat. After that, add turmeric powder.

Now add the boiled potatoes. Season them with salt. Mix everything thoroughly.

Finally, add chopped fresh coriander. Cook the potato mixture over low heat. Stir it regularly to prevent sticking.

Prepare the Spicy Potato Filling

Continue cooking until the potatoes absorb the spices. The filling should not be watery. Therefore, cook away any excess moisture.

Turn off the heat once the filling is ready. Then, allow it to cool.

A relatively dry filling is easier to stuff. Moreover, it reduces the chance of the paratha breaking while rolling.

Stuff and Roll the Paratha

Take a ball of prepared wheat dough. Make a small cavity in the center. Next, add the potato filling.

Bring the edges together. Seal the dough completely. Then, gently flatten the stuffed dough.

Dust it with dry flour. Roll it slowly into a round paratha. Avoid applying too much pressure.

Add more dry flour when needed. This prevents the dough from sticking.

Cook the Dhaba Style Aloo Paratha

First, heat a tawa over medium heat. Place the rolled paratha on it.

Cook briefly on one side. Then, flip the paratha.

Apply a little ghee or oil. Flip it again. Next, apply ghee to the other side.

Continue cooking over medium heat. Flip occasionally for even cooking.

Finally, cook until both sides become golden and slightly crispy.

Serve the paratha immediately. Pair it with curd, butter or your favorite Indian pickle.
