Start by preparing the vegetables. Finely chop cabbage, carrot, onion and capsicum. Also, chop two green chilies.
Heat a pan over high heat. Add about two tablespoons of oil.
Add the green chilies, carrots and capsicum. Stir-fry them for about 20–30 seconds.
Next, add the onion and cabbage. Cook the vegetables over high heat for about two minutes.
Add the Leftover Rice
Add a small amount of ginger-garlic paste. Mix it quickly with the vegetables.
Now add the cold cooked rice. Toss everything gently. Avoid stirring too aggressively because the rice grains may break.
Next, add soy sauce. Add a little red chili sauce and tomato sauce.
The original recipe also uses a small pinch of MSG. However, this ingredient is completely optional.
Season and Stir-Fry
Add salt carefully. The sauces already contain some salt. Therefore, start with a small amount.
The recipe uses approximately ¼ teaspoon of salt. You can adjust it according to your taste.
Toss the rice gently over high heat. Cook for a little longer until everything is well combined.
Your hot vegetable fried rice is now ready to serve.
