How to Make Arbi Ke Patte Ke Pakode

Arbi Ke Patte Ke Pakode are a flavorful Indian snack made with colocasia leaves and lentils. They are crispy on the outside while remaining soft and delicious on the inside.

This recipe starts with urad dal and chana dal. First, soak both lentils overnight. The next day, wash them thoroughly and grind them into a fine paste.

Meanwhile, prepare the colocasia leaves. Remove the stems and wash each leaf carefully on both sides to remove any dirt.

Next, prepare a flavorful spice paste. Blend onions, cumin seeds, black pepper, garlic, and green chilies until smooth.

Prepare the Spiced Lentil Paste

Grind the soaked lentils in small batches until smooth. Then, transfer the ground lentils to a bowl and combine them with the prepared spice paste.

Add turmeric powder and red chili powder. Next, add coriander powder, amchur powder, and salt according to your taste.

Mix everything thoroughly. The lentil mixture should be thick enough to spread easily over the colocasia leaves without becoming runny.

Layer and Roll the Leaves

Place one clean colocasia leaf on a flat surface. Spread the prepared lentil paste gently and evenly over the leaf.

Next, place another leaf on top and spread more paste over it. Continue layering the leaves in the same way.

Be gentle while spreading the mixture so the leaves do not tear.

Once the layers are ready, fold the edges inward. Then, carefully roll the layered leaves into a tight roll.

Cut the prepared roll into slices about one inch thick.

Steam the Leaf Rolls

Heat about two glasses of water in a large pot. Place a perforated plate or steaming tray above the water.

Lightly grease the tray with oil. Next, arrange the sliced rolls on the tray, leaving some space between each piece so the steam can circulate properly.

Cover the pot and steam the pieces for about 10 minutes. Then, check one piece with a toothpick to make sure it is properly cooked.

Alternatively, you can steam the entire roll first. Once cooked, allow it to cool slightly before cutting it into slices.

Fry Until Golden and Crispy

Heat oil in a kadai. Once the oil is hot, carefully add the steamed slices. Avoid adding too many pieces at once.

Fry them over low to medium heat. Turn the pieces gently while frying so they cook evenly on both sides.

Continue frying until the outside becomes golden and crispy. Finally, remove the pakode from the oil and drain the excess oil.
